A shopping center in China features a Pink and Purple themed parking lot for Lady Drivers only with parking spaces three feet wider than “regular” parking spaces, female attendees to guide lady drivers into the spots, and extra lighting.

1 Wegmans Garlic and Lemon Rotisserie chicken, quartered
1 big carton of GF (gluten free) Chicken broth (if you’re using regular chicken broth, ease up on the salt)
1 bag Wegmans large mirepoix
(mirepoix is a pretentious French word for cut and cleaned onion, celery, carrot)
Kosher Salt (or any salt, really, but Kosher salt is the fun kind you can sprinkle with your fingers)
Pepper  (I prefer the whole peppercorns in the little grinder thing)
Garlic Powder
Rubbed Sage
Crushed Thyme
Bay leaf
Olive Oil
Your favorite pasta

Start the water to cook your favorite soup pasta…Me, I used Scharf GF (Gluten Free) Tagliatelle…mmm…just like egg noodles…cook your noodles, drain, and rinse.

While you’re cookin’ yer noodles,

Preheat large dutch oven (a wicked large pot) over medium heat and coat bottom with olive oil, maybe two tablespoons.

Add entire bag of mirepoix and several pinches of kosher salt, like a teaspoon, and half as many pinches of pepper or four to six grinds of pepper.

Sautee for about eight minutes.

NOTE…If the chicken broth you’re using is regular sodium, ease up on the salt…the chix broth I used was “Low Sodium” so I was heavy handed with my salt.

Wegmans should give you a lemon with your rotisserie chicken, and squeeze over the sauteed mirepoix and try not to get seeds in it. Mmm…deglazing with citric acid…sooo good.

Dump entire carton of chicken broth into the pot and add chicken quarters, bones, skin, and all. Add a bay leaf, a pinch of sage, a pinch of thyme, and six shakes of garlic powder. Add more garlic if you are sicker than I am right now. And, more pepper. Garlic and pepper cure everything.

But, seriously, use the thyme, sage, garlic, salt and pepper to taste.

Bring to a boil, reduce heat, and let cook for about ten minutes so the veggies get tender.

After ten minutes, pull quarters out and remove meat from bones.

Put the meat back in the soup but leave the bones out. Give skin and fat to your dog. Don’t eat the skin. Nothing but fat and bad cholesterol.

Pile your bowl full of noodles. Then, pile your bowl full with delicious chickeney soupey goodness and feel better.
